in Fig. 7 were taken—at the narrowest part
over the 'eye' muscle. The three carcasses
illustrate :
Top : A carcass with too little fat and an
insufficient thickness of 'eye' muscle.
Middle: A carcass which has the propor-
tions of fat and muscle required by the
public.
Bottom : A carcass in which the fat is much
too thick.
